What is your presentation about?
Foods produced from farms and factories and delivered to humans eventually are digested, absorbed, metabolized, and used inside the human body through nutritional processes, which promote or harm the health of the host depending on the environmental and genetic settings. Insulin controls the blood glucose homeostasis through regulating the uses of macronutrients (glucose, amino acids, and lipids) in metabolism intracellularly, a process that can be influenced by dietary factors and compositions. Theoretically, any factor from the food production to intracellular metabolism should be able to affect the final outcomes of glucose homeostasis.

What makes this topic important in 2021?
Recent research works have indicated that different food components affect the blood glucose levels differentially, showing the importance of precision (personalized) medicine in the prevention and treatment of type 2 diabetes. The roles of every food component in the development of insulin resistance, and type 2 diabetes and insulin resistance, should not be ignored by everyone who is interested in the etiologies and treatments of diabetes.
